We are in the process of deploying an exchange 2007 CCR. We currently have a
single exchange 2007 server. My plan is to install the cluster in the same
mail org and then move the mailboxes from the existing server to the cluster.

I'[m guessing that the machines have to be in the same mail org?

Is there anything else I need to consider - is it going to be a problem
removing the old mail server once the mailboxes are moved?

Move all the mailboxes to new server and fallow the article below to
decommission the old exchange 2007 server. Make sure all existing roles have
been moved over to new server and proper adjustments have been done on your
firewalls
